Hayley's Chicken Pies (Makes 8 pies)
4 Puff pastry sheets
2 chicken breast fillets
1/2 tin Campbells (or other) Chicken and Corn condensed soup
Crushed garlic
Soy Sauce
Olive oil
Method:
Dice the chicken into pieces.
Brown the chicken in olive oil in a hot fry pan, lightly coating with garlic (about a teaspoon) and soy sauce (pour over chicken enough to lightly coat each piece of chicken).
Once chicken is just cooked through remove from heat.
Cut pastry sheets on the diagonal in half.
Place several pieces of chicken (about 3-4) in the middle of the triangle.
Add to the meat a tablespoon of condensed soup (do not pre-heat the soup)
Then fold the edges of the triangle on the longest side in to meet the bottom point of the triangle. (Should make the triangle now look like a square).
Use a fork to press the edges together along the edges that are not sealed (one edge is a fold and doesn't need to be forked)
Place in a hot oven (approx 180-200) and cook for approx 20 minutes or until pastry is golden brown.
Serve with a side salad or vegetables.
